1. Sara’s Soup - I need to come up with another...
Ingredients:
- 5 chicken breasts (cut up into chunks)
- 2 cans of chicken broth
- 1 can of whole kernel corn (drained)
- 1 can of kidney beans
- 1 can of diced tomatoes (drained)
- 1 packet of Good Seasons Italian Seasoning
- ½ block (large block) of Velveeta (cut up into 1/2 cubes)
- 2 cups of water (more for more “soupy” soup)
- 2 cups Bowtie pasta (any pasta will work though)
Steps:
1. In a Dutch oven or large cooking pot, cook chicken in 1 tbsp of olive oil (you could also use vege oil)
2. After chicken is cooked… add veggies, both broths, seasoning, and water – Bring to a boil
3. When boiling, add pasta. Cook under tender (10 minutes for so)
4. When pasta is cooked, add Velveeta. Cook until cheese has melted
Makes a LARGE pot…I’ve not halved it yet but don’t see why it couldn’t be.
